Cookin' Wednesday

Fire up the kitchen y'all---this is a good one! Last week I took friends some dinner because they just had a baby and let's be real the dinner is a rouse to just get baby snuggles in :)

So this is my go to chicken recipe. It is YUMMY! I wanted to have something else to go with it and found this tomato pie recipe & it was also so so good!

So here is the YUMMIEST CHICKEN EVER:

- 4 Chicken Breasts
- Duke's Mayo--about 1 cup
- Italian Bread Crumbs--1/2 cup
- Parmesan Cheese-shredded- 1/2 cup
- Seasoning of your choice--I love Spinach & Herb mix from Tastefully Simple

Mix mayo, bread crumbs, cheese and seasoning. Preheat oven 350 degrees. Spray your pan with non stick. Place chicken in pan. Spread mix over the top chicken. Cook for 30 min.
Serve and soak up the deliciousness y'all.

In an online group I am part of, we have started a book club on business focused books. This month's book is People Over Profit. I am behind but plan on catching up next weekend. I am headed to the beach in a few weeks what are you reading?

What I am...planning
A VACATION. Praise sweet baby Jesus. My darling parents are gifting Lee and I to celebrate the big birthday that will not be named, and his graduation. We get to choose where we want to go and in all honesty I cannot decide! We want tropical, great food, nice resort, stuff to do if you want but if not that's ok too.

Weekend Review

Happy Monday loves!

Hope you had a great weekend!! I didn't have to work this weekend which was a welcome break in the crazy that is wedding season.

We sorta laid low this weekend which was great. Lee studied for an upcoming mid-term and I enjoyed seeing my best friend from Texas and saw GARTH BROOKS Saturday night. Y'all. Garth was amazing. It was one of those surreal moments where I just couldn't believe I was there!



And like everyone else, we watched about 9 episodes of Orange is the New Black. I love that show. I got some pool time in Sunday which was nice, but holy hotness. It is summer!

This week, is busy busy. I have a couple days full of meetings, and I am going to the Delta Zeta Headquarters at the end of the week which I am really excited about. 

Mondays I like to use for week planning---plan my menu, meal prep and schedule/to-do evaluate. What do you do on your Mondays?

The Blog is Back! Cookin' Wednesday




The blog is back! I have missed blog life. I love writing....I always have and so I love being able to share a little slice of my life in this unique way.

So every Wednesday will be Cookin' Wednesday! I have recently embarked on a journey of healthier living. Now look, I love food. Like LOVE food. Basically all my social activities revolve around food. I am Italian---it's in my blood. But I had realized I had bad habits and made lots of excuses. Now I am not doing perfect---for example today I had chick fil a for lunch...but about 80% of the time I am getting it right. I am also moving more. Working out for 30 min a day is starting to become part of the routine. I don't like it but I love how I feel afterwards! So I have been asked a few times what my meal plan is looking like these days. I will say I believe the secret to the success is PLANNING. Do your prep work one day of the week to get your ready for the whole week so throwing lunches and dinners together is a breeze! For me that is usually Sunday or Monday. So here is what a day in the life looks like:

Breakfast: 2 eggs, sometimes on an english muffin or a Shakeology shake (my new fave protein shake!)
AM Snack: A low fat string cheese stick and some fruit, and maybe some almonds
Lunch: Salad with chicken (pre-prepped), cranberries, almonds, goat cheese(2 tablespoons), sun dried tomatoes. Dressing: pesto, low fat greek yogurt, lemon juice, and olive oil. Eyeball and make to taste. For a salad, you can really add whatever veggies you love
PM Snack: Luna Bar---this is like having a treat!
Dinner: Chicken or Salmon, Green Veggie of choice, and 1/2 a sweet potato. We mix it up with taco tuesday, and meatless monday. I try to keep about 5-6 recipes in rotation each month. That way we don't get bored but I don't have to over think what I am cooking each night.
